The tale of two recipes…

I made two yummy recipes last weekend… and made this salsa again today too!  Thought I would share.  The salsa is super easy… the blueberry muffins not as easy. 

I got the salsa recipe from Kelly’s Korner.  It was super yummy!

Salsa
1 (14 1/2 oz.) can tomatoes and green chilies
1 (14 1/2 oz.) can whole canned tomatoes (plus the juice)
4 teaspoons jalapenos diced
1/4 cup diced onion
3/4 teaspoon garlic salt
1/2 teaspoon cumin
1/4 teaspoon sugar
1/4 teaspoon cilantro 
juice from 1/2 lime
1. In food processor place jalapenos and onion and process for just a few seconds.
2. Add both cans of tomatoes, salt, sugar, cumin,cilantro and lime juice.
3. Process all ingredients until well blended but do not puree.
4. Place in covered container and chill.

 

I got the Blueberry muffin recipe from allrecipes.  They were awesome and totally not good for you.  :)

To Die For Blueberry Muffins
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon

Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.

  1. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  2. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  3. Bake for 20 to 25 minutes in the preheated oven, or until done.

Looking back at first days of school…

I still can’t get over how much my kids change in a year.  It is gradual in the day to day, but when you look back on pictures, it’s hard to believe.

At six and a half…

So this fellow is 6 and a half and in first grade!!

 

A few things about D3 at six and a half…

  • He loves his baby brother and watches out for him.
  • He loves to color.
  • His favorite colors are green and blue.  He asked for a blue room with a green stripe when we moved:
  • He can work the TiVo like a pro and forever sets up recordings for various shows.  He loves Scooby Doo and has a bunch of Scooby Doo movies on our TiVo right now.
  • D3 eats an apple almost every day after school and loves to eat rice with butter.
  • He loves music and always has his MP3 player going in his room.  Santa brought him an MP3 player and a radio that it is connected to it and he has loved it! 
  • I asked him his favorite songs and he said “Since U Been Gone” and “Bad Day”- the Alvin and the Chipmunk’s version.  :)

  • I also asked him his favorite singer and he said the Jonas Brothers.
  • He is not shy in the least and never meets a stranger. 
  • He sang karaoke all by himself a while back.  They were having Karaoke night at my parent’s lake place and he chose to sing Rascal Flatt’s Fast Cars and Freedom.  He ran on stage all by himself and sang in front of a big group of strangers.
  • He loves our new church and the fact that we go twice on Sunday.  :)
  • He is reading like crazy and loves the Magic Tree House books.
  • His favorite part of his school day is P.E.
  • He has a ton of energy and a sweet heart!

Weekends…

It didn’t take long being back in school to fall in love with the weekend.  It’s so wonderful to set your own agenda and to have the whole family together.

We spent today shopping most of the day away.  The poor boys did pretty good putting up with all of our shopping.  We bought our first piece of furniture together today!  I really can’t believe we have been married almost nine years and have never bought furniture together.  That’s totally sad!  ha!  Bookcases and D3′s bed don’t count!  We bought a beautiful dining table and chairs.  They are going to deliver it next Saturday and I’m so excited.  I wish we would have taken a picture of it in the store, but we didn’t think of it.

Oh, and my deal of the day was a pair of Skecher’s Koolers for $4.99.  They came with several Cali Bits which is Skecher’s version of jibbitz.  D3 moved his Star Wars jibbitz from his Crocs over right away.  :)

Dan bought the boys a treat since we kept them shopping so long.

I won’t even begin to recount our day on Friday.  I don’t want to get into talking about plumbers and kids digging in their pullups and requiring 2 baths, or the car battery dying during a thunderstorm.  Ugh.  I’ll just focus on my happy Saturday, and I’m sure there will be a happy Sunday to follow!

First day of preschool….


Look at that face!!!  Do you think he was excited about his first day at preschool?

I was really worried about him, because he does not deal with new things very well, but he walked straight in his classroom and started playing.  He had such a great day.

I’m the one that can’t believe my baby is eating lunch at a big boy table, and sitting in circle time, going to music and the library, etc. 

We are so blessed with his preschool teachers this year, they are wonderful.  And he loves them!
